How Ember & Bloom Started
Ember & Bloom began in the kitchen of Gig Harbor native Brittany, a lifelong baker whose love for the craft started as a child, making desserts alongside her grandparents. That early spark carried her through the pandemic-era sourdough craze and into professional experience at local specialty bakeries serving gluten-free and other dietary-restricted diets — work that sharpened her skills and planted the seed of one day running a bakery of her own.
In May 2024, an unexpected health journey changed the course of her path. Adapting to new physical limitations, Brittany turned to an AIP diet to identify what foods might be triggering her symptoms — and in doing so, discovered a gap in her own community: a real shortage of gluten-free and dairy-free breads and sweet treats. It was a problem she quickly learned many others had been quietly living with for years.
That discovery became the foundation for Ember & Bloom. Brittany began baking specialty gluten-free and vegan breads and treats from her own home, driven by the belief that everyone — regardless of dietary restriction — deserves to enjoy the simple pleasure of delicious baked goods. What started as a home-based passion project opened its doors in Spring 2025, bringing comforting, innovative, wholesome treats to the Gig Harbor community.
Today, that same spirit of care and craftsmanship continues at Ember & Bloom — a bakery built on the idea that delicious should never have to mean off-limits.
