Hi, I'm Brittany, and I'm the owner/baker behind Ember & Bloom Bakery. I remember the day I picked up my copy of Tartine Bread, ready to dive into the world of sourdough. But words like "discard," "fermentation," and "proofing" sent me into a spiral. It seemed like rocket science and it took 2 full days to bake just ONE loaf! After reading the whole book front to back, two weeks and four days later, I finally had a beautiful loaf. Beginner's luck, I thought.
The hard part wasn't the first loaf—it then became the mountain of starter and the endless hours the process seemed to demand. But I'm here to tell you: it doesn't have to be that way. You just have to remember a few things (sounds good to me) and you’ll be a pro in no time. Once you go home all you have to do is remember to feed your bubbly friend, and put the loaf we made together in the oven.
There's a common misconception that all sourdough is gluten-free. That's not true! I'm here to show you how to create a hearty gluten-free sourdough starter, and loaf using all organic flours. Bonus!
